Spicy Shrimp Fajitas!

If you follow me on IG, you saw my yummy dinner!! It was simply amazing! I had requests to post the recipe on the blog so here it is!!

{The original recipe called for chicken, but I couldn't get mine to defrost, so I resorted to shrimp and I am so glad I did!! I give it a 10!!}

Ingredients:
  • 1 pound boneless, skinless chicken breasts, cut in to strips {Again, I used about a pound and a half of peeled and de-veined shrimp}
  • 2 teaspoons cayenne pepper powder 
  • 2 teaspoons cumin
  • 1/2 teaspoon dried oregano
  • pinch of sea salt and group pepper
  • 1 medium onion, sliced
  • 1 large bell pepper, seeded and sliced {I used a green pepper}
  • Whole wheat tortillas
  • Toppings of your choice



Instructions:

1. Preheat the oven to 400 degrees. Place protein in a greased 13 x 9 baking dish
2. In a small bowl combine the cayenne pepper powder, chili powder, cumin, dried oregano, salt and pepper
3. Drizzle spice mixture over protein and stir to coat
4. Add the peppers and onions to the dish, stir to combine
5. bake uncovered for 20-25 minutes or until protein is cooked trough and the veggies are tender {I only cooked mine for 15 minutes, since the shrimp was pre-cooked frozen shrimp}
6. Serve on tortillas with toppings

  1. This looks delish. After baby girl gets here in ten short weeks I will be focusing on CLEAN EATING! I had just started the advo cleanse (1 week in) when I found out I was pregnant!! I still have my things for the 24 day cleanse and plan on doing that as soon as it's safe. Just pinned this recipe on my pinterest board!!!
